What is the Clipping?

Hi!

What is the clipping and whats is the efect on the multicopter flight? I know is something related with the vibrations on the axes.

Clipping means the accelerometers have been exposed to a level of vibration beyond their full scale measurement range. These are feedback signals for loop control so if they are clipping attitude control cannot be maintained.

And how can realize about the clipping? on the VIB I can see the Clip X, Y and Z, but always is 0

Then there is no clipping. Arducopter presents clipping in a cumulative fashion. Each clip event adds to the previous. Some clipping from aggressive maneuvers can be handled. Clipping from vibration seen at a hover is what you want to focus on.

You need to look for IMU datasheet for your FC.
