That problem has bit so many people. It’s active by default because these ESC’s are typically targeted at mini quads with high kV motors. But they are perfectly happy running any brushless motor IMO. They work fine for me on 320kV motors at default settings. Other than that one of course!
700mm is a decent size. Measure the motor center to motor center distance between adjacent motors. Subtract 1". That will give you the length of longest props you can run (baring any physical obstructions of course). I’m thinking you should be running sub-400Kv motors and swinging 16" props.
You could try 17’s, but you might find the blade speed too low and a hover point that is well below 1/2 throttle. In this situation the aircraft is sluggish and landings can be tricky due to the lack of throttle resolution between full low throttle and hover throttle.
