After playing around with Mission Planner and uploading the firmware for the quad copter I have notice that the flight modes pull down are blank. Has anyone seen this or am I missing something on my initial setup.

You need to be careful that you are using the latest version of not just the firmware but also Mission Planner.
There has been changes in the parameter names over past versions which means earlier versions of the GCS will not read the values correctly.
I have seen this with a version of mission planner about a year ago. I resolved it by un/reinstalling MP. No idea what the underlying cause was but was very screwed up and not specific to the MP version, just my installation of it went screwy one day after working fine.
