Which motor and autopilot combination should I use if want to log individual motor power, energy data in the .BIN files?

Hello @iparaj welcome to the community.

You can use any of the supported STM32 F7 or H7 based ardupilot boards
You can use any brushless motor.
You need ESCs with telemetry. Either DroneCAN, FETtec or BDShot (BLHeli32)
