In the Wiki “common-Pixhawk Wiring and Quick Start” I can’t find how to connect the servos
for Plane or Elevons.

Is this the same as for PX4?
I use a power distribution board.
It’s very easy to make
- bread board
- Servo pins
- soldering iron
You need to run power on one rail and ground on the other. Then you need to split the signal wire so that way you are only running the signal wire to the pixhawk/APM.

Which servo to which connector.(Channel)
And for the different plane setups.
Probably motor on channel 3.
Your right - its not on the Pixhawk page - I’ve added a note for myself to update it. In the mean time yes your correct - its the same as the PX4 here
