Help with Drone Crash in High-Altitude Plateau

I have been testing and flying a 7-inch drone, which performed perfectly well during a test flight at an altitude of 200 meters above sea level in a plain region. However, during a recent trip to a high-altitude plateau at approximately 3000 meters above sea level, my drone crashed within minutes of being airborne. This unfortunate event has left me puzzled and seeking answers.
Attached below, you’ll find the flight logs from both the test flight in the plains and the ill-fated flight in the high-altitude region. I hope these can provide some clues to anyone able to help diagnose the problem.

Motor: RCinpower SmooX 2806 plus 1350KV
FC: Kakute H7 Mini V1.3
ESC: Tekko32 F4 4in1 Mini 45A ESC
Battery: 6S1P Li-ion 21700
Takeoff weight: 1150 g

The Motor outputs were struggling on takeoff and then went haywire at ~100m oscillating badly. I would not think that a change in altitude of 3000m would cause this but it wasn’t seen on the test flight. The Li-ion battery sags quite a bit.

Note:eCalc says an increase in altitude of 3000m is only worth ~5% less thrust.
