Engine-out training

I want to develop a landing sequence for an engine-out situation. The basic idea is to go to what would be the downwind-to-base turn, loiter there until I bleed off excess altitude, then proceed to normal base and final legs. Land somewhere along the centerline of the runway without worrying about the specific touchdown point.

I have an airspeed sensor.

My specific question is: how to I simulate the engine failure? How do I prevent AP from using throttle to make glideslope angles, especially if I run into headwind? Can I simply set servo output(3) to 0? Do I need something more drastic?
