Ardupilog can do one thing only: convert an Ardupilot flight log to a format Matlab can read.
It can’t help you with what you are asking.
What @amilcarlucas is suggesting is definitely a valid path.

But the mode plotting code looks amazing!
Would you be OK if I turned it into a new feature of Ardupilog? I’ll attribute it to you, of course.
