Yes the esc is rebooting i can hear start up beeps as it boots up again
I fly FBL and flybar helis but I do not use arducopter. I think you are fighting with an incompatibility between arducopter and the DDFP tail rotor.
No i think its a tunning issue there is official support for ddfp but not enough documention given on that
