having set the H_SV_MAN parameter to 1 I found that changing the parameter SERVO3_TRIM didn’t move servo3 at all, even when I set it at 2000

Because your swashplate servos are not on the first three, they were 5/6/7 if I recall correctly from your parameters.

Dohh I moved the servos assignments to keep them together on the Matek H743WING board. Well remembered Ferrosan!

Well done on the fix, its yet another example of how a well setup, well sorted aircraft that flies nicely without a flight controller is the best starting point for ardupilot.
