It may be caused by the plane thinking it is flying, FBWB is speed& altitude control mode so it tries to reach target speed and altitude. If you don’t have pitot probe it sets cruise throttle and allows nudging above mid stick.
Plane may be affecting is flying logic making it more sensitive.
If you have a VTOL you should takeoff in Q_STABILIZE (before completing setup and tuning) or Q_LOITER (after tuning) for vertical takeoff or in Manual (before setup) or TAKEOFF (after setup) for FW takeoff.
IIRC in Q_OPTIONS there are bits to inhibit fixed wing takeoff and landing.
The pitot tube is not connected yet, I did not know about the Q_OPTIONS bits for prohibiting takeoff and landing of fixed-wing aircraft, thank you for reassuring me).

You need to save flight mode settings for them to take effect.
FBWB provides speed and altitude control. Without pitot probe or synthetic airspeed it is quite rudimentary but there is no longer direct connection between stick throttle and autopilot output. Throttle increase should happen above mid stick position.

interestingly, if I turn off Q_ENABLE - Disable, then the problem goes away and the gas in airplane modes works as usual, I can control the gas in any flight mode
