I am sure you know that ESP32 FC is still experimental and you need your own development enviroment to compile the source. As no fixed ESP32 platform for Ardupilot is existing you are relative free to adapt the pinout to your requirements. This is done by your own HWDEF. Samples you can find in the “ardupilot/libraries/AP_HAL_ESP32/hwdef” directory
